Friday Five – Post NFL draft, pre-weekend


  1. We had five people over last night to watch the Draft, which was fun but also, a late night to eat and drink. I say late but most everyone was gone by 10. But it was still pretty cool, I thought, if even not a large gathering. I made my sausage balls and tried my hand at a street corn dip. It turned out great, actually, but I cannot share a recipe, as I read about four and then made my own way. Essentially, I cut the kernels off five ears of corn and toasted them in a cast iron skillet with oil. I then added some butter and jalapeños and let those simmer a bit. I then added equal parts (1/2 cup) of mayo, sour cream, and cream cheese, which was mixed with chili powder, garlic powder, salt, pepper, and lime zest. I added some lime juice as that melted down, then some monterey jack and cojita. I topped it with some cojita and more monterey jack and then baked it for maybe 5 mins. I’d do it for longer next time. When it came out, I topped it with cilantro and more cojita. Very tasty!
  2. Today is weird because we only have 25 min classes due to an event they do called Panther olympics. (obviously we are the Panthers). The kids had to gather teams and practice and then they go up against other teams. Should be fun for them, though takes away my long planning periods, since we teachers have to go witness it. Oh well.
  3. The afternoon will also be a bit different; I plan to head home and get a run in. I meant to yesterday but I took a 30 minute nap instead. Once I run, I’m thinking Chipotle. I have enough rewards to get half off my bowl. Ash and our friend Rob are headed to Gainesville to drop off competition submissions and pick up ingredients for our next four brews! They’ll probably eat and go to a brewery before coming home, so this frees up me evening a bit.
  4. I hope I wake up feeling motivated on Saturday because my goal is to do some weed whacking. Ash bought us a new one (and a blower) for Christmas and I have yet to really tackle the yard. We’ve mowed and I have my lawn guy’s boys (he’s the one who had cancer so his kids are splitting his jobs) coming next week to hedge and edge. But even though we’re still having mornings in the 50s, Spring has sprung and stuff is growing!
  5. With only a few weeks left in the semester, I can feel that thing that happens around this time. I can only explain it as that pull to do more outside the confines of school. The kids want to hang out with their friends more often, as if there weren’t school the next day and homework to get done. I like that feeling of being…free. I am in need of it myself. Though I am not fizzling out just yet; I have many plans for my classes and I think we’ll finish strong. As I always say: one day at a time!
